Bacon Cheese & Veggie Quiche

Ingredients
- 2 (9 inch) unbaked pie shells
- 2 cups bacon
- 8 eggs
- 2 cups half-and-half
- 14 ounces artichoke hearts, diced
- 28 ounces diced tomatoes
- 2 cups colby-monterey jack cheese, shredded
- 2 cups mozzarella cheese, shredded
- 16 ounces frozen chopped spinach
Directions
- thaw and pat dry spinach.
- preheat oven to 375 degrees.
- press pie shells into pie pans.
- mix all ingredients together.
- pour equal amounts into pie shells.
- bake for 30 mins or until center is set.
