Bacon Cheddar Little Potatoes

Yields: 1 8 x 8 pan

Ingredients

  • 1 12 lbs new potatoes, sliced in half lengthwise
  • 1  small onion, diced
  • 2  teaspoons seasoning salt
  • 1  teaspoon  garlic salt
  • 2  tablespoons butter, cubed
  • 2  cups cheese, three cheese blend, shredded
  • 1  cup bacon, cooked and crumbled
  • 14 cup  sliced green onion, for topping (more or less as desired)

Directions

  1. Preheat oven to 400 degrees. Spray an 8 x 8 baking dish with nonstick cooking spray.
  2. Combine potatoes, onion, seasoned salt and garlic salt.
  3. Stir until the potatoes are coated with the seasoning. Pour mixture into prepared baking dish.
  4. Dot the top of the potatoes with cubed butter.
  5. Bake uncovered for 30 minutes, or until potatoes are fork tender.
  6. Remove pan from oven, then add shredded cheese and crumbled bacon. Return pan to the oven and back for another 8-10 minutes until cheese is melted.
  7. Remove pan from oven and sprinkle with the sliced green onions before serving.
