Bacon and Tomato Pasta

Ingredients
- 1 tablespoon olive oil
- 1 onion
- 2 garlic cloves
- 100 g streaky bacon
- 1 courgette
- 6 mushrooms
- 2 tablespoons red wine vinegar
- 1 (400 g) chopped tomatoes
- 400 ml water
- salt
- pepper
- basil
- 300 g dry pasta
Directions
- Chop onion and fry in olive oil until softened.
- Add chopped garlic and bacon and cook for five minutes.
- Add chopped courgette and mushrooms and fry for 3 minutes.
- Add red wine vinegar and cook off till almost all liquid has disappeared.
- Put chopped tomatoes and water into the pan and cook gently for approximately 10 minutes
- Season to taste and add basil to taste.
- Boil water and cook pasta for time stated on pack.
