Bacon and Blue Cheese Potato Surprise

Ingredients

  • 14 cup mayonnaise
  • 2  tablespoons sour cream
  • 12 tablespoon vinegar
  • 12 tablespoon dry mustard
  • 1 12 lbs  red potatoes, cooked in skins and cut into chunks (can peel after cooking if desired)
  • 4  slices bacon, cooked crisp and crumbled
  • 12 cup  crumbled blue cheese
  • 2  tablespoons green onions, sliced thin
  • 12 tablespoon parsley, minced
  •  salt and pepper

Directions

  1. In large bowl, combine mayonnaise, sour cream, vinegar and dry mustard.
  2. Add the remainder of the ingredients and toss gently to coat.
