Baby Leeks with Parsley

Serves: 3-4
Ingredients
- 2 1⁄4 cups sliced baby leeks
- 1 tablespoon olive oil
- 1⁄2 lemon, juice of
- salt and pepper
- 2 tablespoons flat leaf parsley
Directions
- Put enough water in large pan to cover the leeks and bring to a boil Cover anbd cook gently until leeks are very tender and easily pierced with a knife point.
- Drain.
- Add olive oil and lemon juice Season with salt and pepper Sprinkle with parsley and serve.
