Baby Greens With Chopped Vegetables

Ingredients
- 1 cup cucumber, finely cubed
- 1 cup red bell pepper, finely chopped
- 3⁄4 cup tomatoes, finely cubed with no seeds
- 3⁄4 cup green onion, chopped
- 1⁄2 cup cilantro, finely chopped
- 1 tablespoon hemp seeds
- 1 tablespoon avocado oil (or hemp oil)
- 4 tablespoons fresh lemon juice
- 1 teaspoon sea salt (Himalayan or Celtic)
- 1⁄4 teaspoon pepper (to taste)
- 6 cups baby greens, of your choice
Directions
- Mix all ingredients except the baby greens and toss. Best if sits for 10 minutes or so to let flavors develop.
- Divide greens among 4 plates and top with chopped vegetable mixture.
