Baby Food - Tomato Butter

Ingredients
- 1 medium tomatoes
- 4 fluid ounces tomato juice
- 1 ounce butter, at room temperature
- 1⁄2 tablespoon heavy cream
Directions
- Halve the tomato and place, cut side up, in a baking dish.
- Roast at 450 F, for 20 minutes.
- Puree the roasted tomato with the tomato juice, then strain.
- Place in a small saucepan and bring to the boil over a high heat.
- Reduce the heat and simmer for 10 minutes.
- Just before serving, slowly add the butter and warm gently.
- Finally, whisk in the cream.
