Baby Bok Choy With Mushrooms

Yields: 6 baby bok choy
Ingredients
- 1⁄2 tablespoon bacon grease
- 1⁄2 tablespoon oil
- 4 garlic cloves, minced
- 6 heads baby bok choy, halved, washed and de-cored
- 12 medium button mushrooms, sliced
- 6 medium cremini mushrooms, sliced
- 1 cup chicken stock
- 1 tablespoon soy sauce
- salt and pepper, to taste
- 2 teaspoons chives, chopped
Directions
- In a hot skillet, heat oil and bacon grease. Saute garlic until aromatic, about 2 minutes. Add bok choy, mushrooms, salt, and pepper and cook for 3 minutes. Add stock and soy sauce, simmer for 20-30 minutes. Stir in chives. Serve hot.
