Baby Beet Salad With Rocket and Goats Cheese

Directions

  1. Place beetroot in a large saucepan.
  2. Cover with cold water, bring to the boil.
  3. Simmer 40 minutes or till tender, cool in pan.
  4. Drain beetroot.
  5. Use your hands to rub off skin.
  6. Combine beetroot, rocket, onion, cheese and pinenuts in serving bowl.
  7. Shake oil, juice and sugar together.
  8. Season to taste.
  9. Drizzle salad with dressing just before serving.
