  1. Toast the pine nuts and cool.
  2. pit and scoop the avocados.
  3. add everything but the bread and eggs to the food processor pulse to blend until pesto consisity. taste and adjust salt if required.
  4. if there isn't enough mixture to process add one more avocado Sometimes you need more lemon juice as well.
  5. spread thickly on the each toast and top with an over easy egg or your preference of egg.
  6. depending on the size of the avocados there will probably be enough for an everyone to have an extra slice.
