Avocado Omelet

This is a recipe I got out of the newspaper 35 years ago in 29 Palms, California...this is very tasty. Show more

  1. Omelet:
  2. Prepare as a regular omelet. Add avocado slices inside.
  3. Sauce:
  4. In a medium skillet cook onions, tomatoes, salt, papper, chili pepper in butter. Simmer several minutes under onion is tender. Remove from heat. Peel avocades and reserve some slices for garnish. Mash remaining avocado and add to sauce. Mix well. Put in gravy boat so guests can ”pour“ it on.
