Avocado Mayo Substitute

Yields: 1/2 cup
Ingredients
- 1 avocado, cut in chunks
- 1 tablespoon lemon juice
- 1 -2 teaspoon Dijon mustard (I use the grainy kind)
- 2 -3 teaspoons rice milk, milk alternative (rice milk, hemp milk, etc.)
- 2 dashes paprika
- 1 pinch salt
- 1 pinch sugar, if you like your mayo a bit sweeter
Directions
- Combine all ingredients—using the lower ends of the amounts—in a food processor or blender. (It works better in a food processor.) Pulse to combine.
- Taste, and add additional bits of any ingredients to get the mayo substitute to your flavor preference.
