Aussie Damper / Yankie Cornbread

This is an adaption of a good US cornbread recipe - using stuff you can buy in Australia... Takes literally 2 mins to prepare and big eaters (ie men folk) will love it. Fantastic with ribs (see mine...) and coleslaw. 500g box of Coles homebrand multipurpose muffin mix has been omitted from the recipe by the ingredient police. Serves: 6

Yields: 6 sidelines

Ingredients

  • 1  teaspoon  dried onion
  • 50  g eggs
  • 60  ml olive oil
  • 100  g cheddar cheese, grated (I like Colby)
  • 350  g  creamed corn
  • 500  g  corn muffin mix

Directions

  1. Mix lightly until all the flour is just taken up. Don't overdo it.
  2. Lightly grease an 8" baking pan or use a silicon one.
  3. Bake 180 deg C till lightly golden brown and a wooden skewer comes out clean - maybe 30 minutes (shorter time in a tin, longer time in a silicon mould.
  4. Serve hot with cold butter.
