Aussie Damper / Yankie Cornbread

Ingredients
- 1 teaspoon dried onion
- 50 g eggs
- 60 ml olive oil
- 100 g cheddar cheese, grated (I like Colby)
- 350 g creamed corn
- 500 g corn muffin mix
Directions
- Mix lightly until all the flour is just taken up. Don't overdo it.
- Lightly grease an 8" baking pan or use a silicon one.
- Bake 180 deg C till lightly golden brown and a wooden skewer comes out clean - maybe 30 minutes (shorter time in a tin, longer time in a silicon mould.
- Serve hot with cold butter.
