Auntie Bonnie's Chickpea Salad

Ingredients
- 1 (19 ounce) can chickpeas, drained and rinsed (garbanzo beans)
- 1⁄4 small red onion, minced
- 2 garlic cloves, minced
- 1 large tomatoes, diced
- 1⁄4 cup fresh parsley, finely chopped
- 2 tablespoons olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon lemon juice
- 1⁄2 teaspoon salt
- 1⁄3 teaspoon pepper
Directions
- In large bowl, toss all ingredients together.
- Chill at least 1 hour before serving.
- Makes 2 large or 4 small servings.
