Aunt Sophie's

This is a super simple potato dish that came from my husband's family. He says there has never been an Aunt Sophie in the family, but this dish was a family favorite. I never measure what I put into it, but it is so simple, it would be hard to mess up. Prep time includes peeling the potatoes and sweating the onions, but not necessarily boiling the potatoes. Note: I find it easier to peel the potatoes after boiling them - the skins come right off when you rub them with your hands. Show more

Directions

  1. Boil the potatoes just until tender.
  2. In the meantime, sweat the chopped onion in the butter until translucent.
  3. When potatoes are cool enough to handle, peel and cut into bite sized chunks.
  4. Put potatoes in baking dish.
  5. Pour butter and onions over potatoes.
  6. Cover dish with foil and bake at 350 degrees for about an hour.
  7. Shake dish once or twice during baking.
  8. Remove foil and allow to brown to your preference.
  9. Note: You can cook these longer at a lower temperature if you wish. They're done when you think they're done.
  10. Note: Add salt and pepper if you like.
