Aunt Pam's Blueberry Muffins

Ingredients
- 2 cups flour
- 2 teaspoons baking powder
- 1⁄2 cup butter (at room temp)
- 1 cup sugar
- 2 large eggs
- 1 teaspoon vanilla
- 1⁄2 cup skim milk (or unsweetened almond milk)
- 2 -2 1⁄2 cups blueberries (fresh or frozen)
- 1 tablespoon sugar
- 1⁄4 teaspoon nutmeg
Directions
- Preheat oven to 375 degrees; grease, spray or line 12 muffin cups.
- Mix flour and baking powder in a small bowl.
- In another bowl, beat butter until fluffy, then add sugar and mix until well blended.
- Beat in eggs (thoroughly) and mix in vanilla.
- Stir in 1/2 flour mix, then 1/2 of milk, beating well after each addition.
- Add the other half of the flour, mix well, and the rest of the milk, again beating well.
- Gently stir in blueberries.
- Spoon into muffin cups.
- Mix together the tablespoon of sugar and the 1/4 t of nutmeg, sprinkle this on top of the muffins.
- Bake 23-30 minutes. Cool in pan for 15 minutes.
