Aunt Mihee's Carrot Cake

Ingredients
- 3 cups flour
- 2 cups sugar
- 2 teaspoons cinnamon
- 1 1⁄2 teaspoons baking soda
- 1 teaspoon baking powder
- 1 1⁄2 teaspoons salt
- 1 (8 ounce) can crushed pineapple, drained
- 3 eggs
- 1 1⁄2 cups oil
- 2 teaspoons vanilla
- 2 cups grated carrots
Frosting
- 4 ounces cream cheese
- 1⁄4 cup butter
- 1 teaspoon vanilla
- 0.5 (4 lb) box powdered sugar
Directions
- Mix flour, sugar, cinnamon, baking soda, baking powder, and salt. Make a well in the middle and put the eggs, oil, and vanilla in the center. Combine, then add the pineapple and carrots.
- Bake at 325 degrees F for 60 minutes in a 9x13 pan.
- For frosting, mix all ingredients until smooth. Wait for cake to cool, then spread on top.
