Aunt Mabel's Snowflake Pie

Ingredients
- 9 inches pie crusts, baked and cooled
- 1 (1/4ounce) envelope unflavored gelatin
- 1⁄4 cup water
- 1⁄2 cup sugar
- 1⁄4 cup flour
- 1⁄2 teaspoon salt
- 1 1⁄2 cups milk
- 3 egg whites
- 1⁄4 teaspoon cream of tartar
- 1⁄2 cup sugar
- 1⁄2 teaspoon vanilla
- 1⁄2 teaspoon almond extract
- 8 ounces Cool Whip, thawed
- 1 cup coconut
Directions
- Soften knox gelatin in 1/4 cup water and let set.
- Mix together in a saucepan the sugar, flour and salt.
- Stir in milk; cook over low heat, stirring constantly until thick. Cook for 1 additional minute after mixture thickens.
- Remove from heat, stir in gelatine mixture and cool.
- Beat the 3 egg whites; add cream of tartar and the other 1/2 cup sugar. Beat until glossy. Add vanilla and almond extracts.
- Fold in Cool Whip and coconut.
- Put in baked pie shell and refrigerate.
