Aunt Laura's Oklahoma Soup

Posted as a request for "8 can soup". This recipe is one of my Aunt Laura's favorites. It is one of the recipes she gave me while I was compiling the family cookbook. It goes great with cornbread! Show more

Serves: 8

Ingredients

  • 1 12 lbs ground beef
  • 1  large onion, chopped
  • 2  cloves garlic, minced
  • 1 (10 ounce) can  tomato soup
  • 1 (15 ounce) can  ranch style beans
  • 1 (10 ounce) can  vegetable soup
  • 2 (15 ounce) cans  mixed vegetables, drained
  • 1 (10 ounce) can Ro-Tel tomatoes
  • 2  cups water
  •  chili powder, to taste
  •  pepper, to taste

Directions

  1. In a large skillet, brown ground beef with onions and garlic.
  2. Drain meat mixture on paper towels.
  3. To a large stock pot, add meat, tomato soup, Ranch Style beans, vegetable soup, mixed vegetables, Ro-Tel tomatoes and water.
  4. Bring to a boil and add chili powder and pepper to season.
  5. Reduce heat and let simmer about 30 minutes.
  6. ~NOTE~Fresh or frozen vegetables may be used instead of canned.
