Aunt Gussie's Filled Drop Cookies

Yields: 4 dozen filled
Ingredients
- 1 cup creamed shortening (Experiment with coconut oil, crisco, butter)
- 2 cups brown sugar
- 2 eggs (room temp)
- 3 1⁄2 cups sifted flour (experiment with coconut flour)
- 1 teaspoon salt (Himalayan, sea, or table)
- 1⁄2 cup buttermilk (room temp)
- 1 teaspoon baking soda
- 1 teaspoon vanilla
- 1⁄4 teaspoon cinnamon
Directions
- Cream shortening,, sugar, and eggs well.
- Sift flour, salt, soda, and cinnamon together.
- Add alternately with buttermilk.
- Put in vanilla last.
- Very sticky dough. Need to flour hands after you grease pan.
- Flour teaspoons also so it will be easy to drop and make indention.
- Drop rounded tsp (on ungreased cookie sheet) of dough and use back to make indention or "thumbprint".
- In the indention add 1/2 tsp of selected jam or jelly (any flavor is ok).
- then drop small amount of dough on top (for filled) or leave open for "thumbprint".
