Yields: 2 large waffles
Ingredients
- 2⁄3 cup gold medal flour (spoon lightly into cup)
- 1⁄3 cup cornmeal (water ground type, if possible)
- 1⁄4 teaspoon salt
- 1⁄8 teaspoon baking soda
- 1 tablespoon baking powder
- 2 tablespoons Wesson Oil
- 3⁄4 cup buttermilk or 3⁄4 cup sour milk
- 1 large egg (separated)
Directions
- Put egg-white in small mixer-bowl for beating; put yolk in measuring cup, beat lightly; add oil and milk and blend.
- All the dry ingredients go into a large bowl; stir to mix; add liquid mixture and beat until smooth.
- Beat egg-white until stiff, fold lightly into batter; bake on medium-hot griddle.
