Aunt Cheryl's Coconut Pie

Ingredients
- 1 pillsbury pie shell
- 1 1⁄3 cups coconut, shavings
- 3 eggs (beaten)
- 1 1⁄2 cups sugar
- 1⁄2 cup melted butter
- 4 teaspoons lemon juice
- 1 teaspoon vanilla extract
Directions
- Preheat oven to 350 degrees F.
- Beat and combine all ingredients EXCEPT COCONUT.
- Stir in coconut with spoon after smooth.
- Pour mixture in unbaked pie shell.
- Bake for 45 minutes.
- (optional) Serve with Breyer's Vanilla Ice Cream.
