Aspetsa (Greek Isles Seasoning)

From the village of Olympi on the island of Chios. Adapted from The Food of the Greek Islands. Posted for ZWT6. 1/4 cup crushed red pepper flakes and 3 tablespoons paprika may be substituted for the Aleppo pepper.

• Yields: 1 cups

Ingredients

• 7  tablespoons aleppo pepper
• 1⁄4 cup dried oregano
• 2  tablespoons fennel seeds (crushed or ground)
• 2  tablespoons  dried orange zest
• 1  tablespoon dried basil
• 1  tablespoon dried mint

Directions

1. Combine all ingredients.
2. This will keep up to 6 months in a sealed jar in a cool dark place.
