Asparagus Cheese Soup

Yields: 2 quarts
Ingredients
- 1⁄4 cup butter or 1⁄4 cup margarine
- 1⁄4 cup all-purpose flour
- 2 teaspoons salt
- 1 teaspoon pepper, to taste
- 6 cups milk
- 4 cups fresh asparagus, cut into 1 inch pieces, cooked and drained
- 3 cups shredded cheddar cheese
- 1 1⁄2 teaspoons dried thyme
- 1⁄8 teaspoon ground nutmeg (optional)
Directions
- In a large saucepan, melt butter.
- Add flour, salt, and pepper; stir until smooth.
- Gradually add milk and stirring constantly, bring to a boil.
- Boil and stir 2 minutes.
- Add asparagus and stir until heated thoroughly.
- Add cheese, thyme and nutmeg.
- Heat until cheese is melted, stirring frequently (do not boil).
- Ladle into individual serving bowls.
- Sprinkle with extra cheese is desired.
