Asparagus Casserole

A church dinner favorite! This recipe is similar to a green bean casserole but with asparagus.

Ingredients

  • 1 (14 1/2ounce) can asparagus, chopped
  • 34 cup milk
  • 1 (10 3/4ounce) can  cream of mushroom soup
  • 1  cup cheddar cheese, shredded
  • 12 cup  potato chips, crushed or 12 cup  French fried onion rings
  • 2  hard-boiled eggs, sliced (optional)

Directions

  1. Drain asparagus and save juice.
  2. Add enough milk to the asparagus juice to make 1 cup.
  3. In a bowl, mix milk/asparagus juice, cheese, chips or onion rings, and eggs (optional).
  4. Add asparagus and stir lightly.
  5. Bake in small casserole dish at 350 degrees for 30 to 45 minutes.
