Asian Turkey Lettuce Wraps

Ingredients
- 1 teaspoon peanut oil
- 1 lb ground turkey
- 1 tablespoon fresh ginger, minced
- 1 teaspoon fresh garlic, minced
- 1⁄3 cup hoisin sauce
- 1⁄2 cup carrot, shredded
- 1 cup red bell pepper, chopped
- 1 medium cucumber, peeled, seeded, and chopped
- 1⁄2 cup green onion, chopped
- 8 large iceberg lettuce leaves, washed, separated, drained and chilled
Directions
- In a large skillet, heat oil over medium heat. Add ground turkey and ginger and cook 3 to 5 minutes or until turkey is no longer pink. Add garlic and cook 30 seconds. Stir in hoisin sauce and stir while cooking. Add carrots and bell pepper and sauté about 2 minutes.
- Spoon hot turkey mixture onto each lettuce leaf, sprinkle with cucumber and scallions. Wrap lettuce around filling and serve.
