Asian Shiitake and Noodle Soup

Ingredients
- 1 quart beef broth
- 2 cups thinly sliced shiitake mushrooms
- 1 cup chopped red bell pepper
- 1 cup chopped carrot
- 2 green onions, sliced
- 1 teaspoon minced ginger
- 1 teaspoon minced garlic
- 1 teaspoon sesame oil
- 1 teaspoon soy sauce
- 1 cup sliced fresh spinach
- salt and pepper
- 8 1⁄2 ounces japanese udon noodles, cooked
Directions
- Combine all ingredients, except sesame oil, soy sauce, spinach, salt, pepper and noodles in slow cooker; cover and cook on low for 4-6 hours, adding sesame oil, soy sauce and spinach during last 10 minutes.
- Season to taste with salt and pepper. Place noodles in bowl and spoon soup over.
