Asian Salad Supreme

A simple salad with an easy vinaigrette and crunchy stuff on top. That's all I ask for in a salad.

Serves: 4-6

Yields: 6 cups

Ingredients

  • 14 cup  peanut oil or 14 cup  vegetable oil
  • 14 cup rice vinegar
  • 2  tablespoons brown sugar
  • 12 medium cucumber, halved and slice
  • 6  cups lettuce (romaine or leaf lettuce)
  • 1  cup  chow mein noodles
  • 14 cup  nuts (peanuts or cashews)

Directions

  1. Prepare the vinaigrette by combining the oil, vinegar and brown sugar until the sugar dissolves. Toss in cucumber and marinate up to 4 hours, or serve immediately.
  2. Toss dressing with lettuce, noodles, nuts and serve.
