Asian Salad Supreme

Yields: 6 cups
Ingredients
- 1⁄4 cup peanut oil or 1⁄4 cup vegetable oil
- 1⁄4 cup rice vinegar
- 2 tablespoons brown sugar
- 1⁄2 medium cucumber, halved and slice
- 6 cups lettuce (romaine or leaf lettuce)
- 1 cup chow mein noodles
- 1⁄4 cup nuts (peanuts or cashews)
Directions
- Prepare the vinaigrette by combining the oil, vinegar and brown sugar until the sugar dissolves. Toss in cucumber and marinate up to 4 hours, or serve immediately.
- Toss dressing with lettuce, noodles, nuts and serve.
