Arugula Spiked Goat Cheese

Ingredients
- 2 cups baby arugula
- 1⁄2 cup flat leaf parsley
- 1⁄2 small red onion, halved
- 1 garlic clove, quartered
- 4 ounces soft fresh goat cheese
- 1 teaspoon lemon zest
- 2 tablespoons fresh lemon juice
- 2 tablespoons olive oil
- 1⁄2 teaspoon salt
- black pepper
Directions
- In a food processor, pulse arugula, parsley, red onion and garlic until finely chopped, about 10 pulses.
- Add goat cheese, lemon zest and juice, olive oil, salt and pepper. Process until blended.
