Arugula and Tomato Salad

Ingredients
- 4 cups coarsley chopped arugula or 4 cups spinach
- 2 chopped tomatoes
- 2 tablespoons olive oil
- 1 tablespoon minced red onion
- 2 teaspoons red wine vinegar
- 2 teaspoons balsamic vinegar
- 1 pinch salt
- 1 pinch pepper
Directions
- In salad bowl toss arugula or spinach with tomatoes.
- In small bowl whisk together the olive oil, red onion, red wine vinegar, balsamic vinegar, salt and pepper.
- Pour over salad and toss to coat.
