Aruban Island Cooler

Ingredients
- 1 1⁄2 cups fresh pineapple, peeled and chopped
- 1 1⁄2 cups ripe cantaloupe, seeded, peeled, chopped
- 1 1⁄2 cups ripe papayas, seeded, peeled, chopped
- 3⁄4 cup unsweetened apricot nectar
- 1 1⁄2 cups unsweetened pineapple juice
- 3⁄4 cup sparkling water
- fresh lime juice, to taste (optional)
- fresh mint leaves, to garnish (optional)
Directions
- In blender or food processor, puree pineapple, cantaloupe and papaya until smooth.
- With motor running, add apricot nectar, 1 cup pineapple juice and water. Transfer to pitcher.
- Season with lime juice, if desired.
- Add remaining pineapple juice to desired consistency or you can add more sparkling water if desired.
- Pour into glasses filled about halfway up with crushed ice.
- Garnish with fresh mint leaves if you like.
