Ingredients
- 7 ounces red peppers, roasted & coarsely chopped (fresh or jar)
- 6 ounces marinated artichoke hearts, coarsely chopped
- 1⁄2 cup parsley, fresh minced
- 1⁄2 cup parmesan cheese, freshly grated
- 1⁄3 cup olive oil
- 1⁄4 cup capers, drained
- 3 teaspoons garlic, chopped
- 1 tablespoon fresh lemon juice
Directions
- Combine all ingredients in food processor, pulsing until finely chopped.
- Taste and adjust seasoning with salt& pepper.
