Artichoke Heart-Spinach-Mushroom Saute

Ingredients

  • 1  tablespoon garlic, minced
  • 1  shallot, coarsely chopped
  • 1  tablespoon olive oil
  • 4  ounces  baby bella mushrooms, sliced
  • 12  ounces  marinated artichoke hearts
  • 3  ounces  baby spinach leaves
  • 1  teaspoon black pepper
  • 1  teaspoon  italian seasoning

Directions

  1. Saute garlic, shallot and mushrooms in oil until mushrooms are browned. Add artichoke hearts, pepper and seasoning; saute for 3-5 minutes. Add spinach; saute and stir until wilted. Serve hot.
