Artichoke Balls

This is a very versatile and unusual recipe. We all like very much.

Ingredients

  • 12 teaspoon  chopped onion
  • 2  tablespoons olive oil
  • 1 (14 ounce) can artichoke hearts, drained and mashed
  • 1  cup  seasoned bread crumbs
  • 2  eggs, beaten until fluffy
  • 12 cup  grated cheese (your choice)
  • 3  finely chopped garlic cloves
  • 13 cup  breadcrumbs
  • 23 cup  grated cheese

Directions

  1. Sauté onion and garlic in olive oil; drain.
  2. Mix artichokes and bread crumbs.
  3. Add eggs and mix thoroughly.
  4. Add the onion garlic mixture and the cheese and mix well.
  5. Refrigerate 1 hour.
  6. Form balls and roll in a mixture of bread crumbs and grated cheese.
  7. Refrigerate until serving time.
