Arkansas Governor's Mansion Carrot Cake

Ingredients

• 18  ounces  yellow cake mix
• 4  eggs
• 1 1⁄2 cups  oil
• 1  teaspoon allspice
• 1  teaspoon cinnamon
• 3  cups carrots, grated
• 4  ounces coconut
• 1  cup crushed pineapple
• 1 1⁄2 cups pecans, chopped

• Frosting

• 8  ounces cream cheese, softened
• 1  lb butter, softened
• 2  teaspoons vanilla extract
• 1  lb powdered sugar

Directions

1. Combine cake mix, eggs, and oil.
2. Add remaining cake ingredients.
3. Bake in a 9x13 pan for 35-40 minutes.
4. For frosting: Combine all ingredients; frost when cake is cool.
