Ari's Mediterranean Pasta

Ingredients

  • 12  white onion, chopped
  • 20  kalamata olives, halved
  • 3  ounces fresh spinach
  • 14 12 ounces  diced stewed Italian-style tomatoes
  • 12  ounces  whole wheat fettuccine (pretty much the whole box, save one small serving) or 12  ounces linguine (pretty much the whole box, save one small serving)
  • 3 12 ounces  reduced-fat feta cheese, crumbled
  •  salt and pepper, to taste
  •  dried oregano, to taste

Directions

  1. 1.) Prepare pasta as instructed on the box.
  2. 2.) While pasta is cooking, saute the onions over medium heat in a large skillet. As they begin to become translucent, add Kalama olives.
  3. 3.) Once the onions are soft and translucent, add the can of tomatoes and simmer. Add salt, pepper, and oregano to taste.
  4. 4.) When the pasta is nearly finished, add the spinach to the tomato concoction. When the spinach is about half way wilted down, remove from heat.
  5. 5.) Add pasta and feta cheese and toss.
  6. 6.) Enjoy!
