Ari's Mediterranean Pasta

Ingredients
- 1⁄2 white onion, chopped
- 20 kalamata olives, halved
- 3 ounces fresh spinach
- 14 1⁄2 ounces diced stewed Italian-style tomatoes
- 12 ounces whole wheat fettuccine (pretty much the whole box, save one small serving) or 12 ounces linguine (pretty much the whole box, save one small serving)
- 3 1⁄2 ounces reduced-fat feta cheese, crumbled
- salt and pepper, to taste
- dried oregano, to taste
Directions
- 1.) Prepare pasta as instructed on the box.
- 2.) While pasta is cooking, saute the onions over medium heat in a large skillet. As they begin to become translucent, add Kalama olives.
- 3.) Once the onions are soft and translucent, add the can of tomatoes and simmer. Add salt, pepper, and oregano to taste.
- 4.) When the pasta is nearly finished, add the spinach to the tomato concoction. When the spinach is about half way wilted down, remove from heat.
- 5.) Add pasta and feta cheese and toss.
- 6.) Enjoy!
