April's Chicken Salad

I am always looking for great chicken salad recipes and I got tired..........so, I made my own. Enjoy!! Show more

Serves: 8-10

Ingredients

  • 1  plain roasted chicken (from grocery)
  • 1 (4 ounce) bag  of chopped pecans
  • 1 (8 ounce) bag  of citrus berry fusion  dried fruit (Welch's)
  • 2  celery ribs, diced
  • 2  tablespoons lemon juice
  • 1  dash salt
  • 1 14 cups mayonnaise (more or less for your taste)
  • 2  tablespoons honey

Directions

  1. Pick the roasted chicken and process it in food processor .
  2. In a large bowl, add nuts, dried fruits, celery and salt. Drizzle lemon juice and toss. Next, add your mayo and fold in the honey. Chill and eat. You may also want to process and chop your dried fruit. I prefer it chunky! If you have trouble finding this dried mix, use dried apricots and cranberries or halved white grapes -- just have fun!
