Apricot Yams

Ingredients
- 6 cooked and pared yams or 6 sweet potatoes
- 1 1⁄2 cups brown sugar
- 1 1⁄2 tablespoons cornstarch
- 1 teaspoon orange zest
- 1⁄4 teaspoon ground cinnamon
- 1 cup apricot juice
- 1 cup canned apricots, drained
- 3 tablespoons butter or 3 tablespoons margarine
- 1⁄2 cup chopped pecans
Directions
- Quarter the prepared yams and place in a buttered casserole.
- Combine brown sugar, cornstarch, orange peel, cinnamon and apricot juice in saucepan.
- Cook over medium-high heat until sauce thickens.
- Add apricots, butter and pecans.
- Pour over yams.
- Bake at 375 degrees for 25 minutes or until heated through.
