Apricot-Rum BBQ Sauce

Ingredients
- 1 tablespoon olive oil
- 1⁄2 cup minced onion
- 1 tablespoon minced fresh ginger
- 1 cup apricot preserves
- 1⁄2 cup dark rum
- 1⁄2 cup prepared barbecue sauce
- 1⁄4 cup fresh lime juice
- 1⁄2 teaspoon red pepper flakes
Directions
- Over medium-high heat, saute minced onion and ginger in 1 tablespoon olive oil in a saucepan until soft, about 5 minutes.
- Add rest of ingredients and bring to a boil. Reduce heat and simmer 20 minutes or until thickened.
