Apricot-Mustard Glazed Pork Chops (Bone-In)

Ingredients

  • 4  pork chops
  • 2  teaspoons olive oil
  • 1  small onion, cut in thin wedges
  • 12 cup  apricot preserves
  • 14 cup water
  • 1  tablespoon  honey mustard
  • 1  teaspoon paprika
  • 12 teaspoon ground nutmeg

Directions

  1. Season pork with salt and pepper. In skillet, heat olive oil over medium-high heat; add chops and onion. Cook 3-6 minutes; turn and cook an additional 3-6 minutes.
  2. Meanwhile, in a small microwave-safe bowl combine preserves, mustard, 1/4 cup water, paprika, and nutmeg. Heat in microwave for 1 minute or until melted. Pour over pork in skillet. Reduce heat to medium. Cook, covered, 10 minutes or until pork is cooked through.
