Apricot Gelatin Salad

Very fruity. We love this one. Allow time to chill.

Ingredients

  • 1 (6 ounce) package  orange Jell-O
  • 2  cups boiling water
  • 1 (20 ounce) can crushed pineapple
  • 8  ounces cream cheese, softened
  • 1 (15 ounce) can  apricot halves, drained and chopped
  • 12 cup  chopped walnuts
  • 1 (8 ounce) carton  frozen whipped topping

Directions

  1. Dissolve Jello in water.
  2. Drain pineapple, reserving juice.
  3. Add pineapple to Jello.
  4. In mixer bowl, beat cream cheese and pineapple juice until smooth.
  5. Stir in the Jello mixture.
  6. Chill until partially set, stirring occasionally.
  7. Stir in apricots and walnuts.
  8. Fold in whipped topping.
  9. Pour into 9x13 dish.
  10. Chill until firm.
