Apricot Gelatin Salad

Very refreshing - if you can't find apricot gelatin - use orange.

  1. In a bowl, dissolve gelatin in water.
  2. Add the drained pineapple and set mixture aside.
  3. In a mixing bowl, beat cream cheese and pineapple juice until smooth.
  4. Stir into gelatin mixture; chill until partially set, stirring occasionally.
  5. Stir in apricots and walnuts.
  6. Fold in whipped topping.
  7. Pour into a 13x9x2 dish (or other appropriate serving container).
  8. Chill until firm.
