Apricot Dressing for Turkey

I haven't tried this yet but it sounds easy and good. I think that I would add some seasonings to it though. From the American Diabetes Association. Show more

Serves: 12

Ingredients

  • 1  cup  dried apricot, snipped
  • 1 12 cups water or 1 12 cups  chicken stock
  • 1  cup  chopped celery
  • 14 cup  chopped walnuts or 14 cup pine nuts
  • 12  slices  bread, dry, cut small cubes

Directions

  1. Bring the apricots and water (or chicken or turkey stock) just to a.
  2. boil in a saucepan.
  3. Let stand for 10 minutes.
  4. Add the celery, nuts and bread.
  5. Toss lightly to moisten the bread and blend the ingredients.
  6. Spoon into an oiled baking dish with a cover.
  7. Bake in 350F oven for about 40 minutes.
  8. Remove the cover the last 10 minutes of baking to brown the top of the dressing.
