Apricot Delights

These are good on your holiday cookie plates.

Yields: 90 candies

Ingredients

  • 23 cup  freshly squeezed  orange juice
  • 1 (16 ounce) package  dried apricots
  • 2  cups sugar
  • 1 34 cups pecan halves
  •  sugar

Directions

  1. In food processor or blender, process orange juice and apricots until pureed.
  2. Combine apricot mixture and 2 cups sugar in a medium saucepan.
  3. Over medium high heat, stirring constantly, bring to boil.
  4. Keep stirring, reduce heat to medium and boil 12-14 minutes.
  5. Remove from heat and cool for 20 minutes.
  6. Drop teaspoonfuls of mixture into a small bowl of sugar.
  7. Press a pecan half into top of each candy.
  8. Spoon sugar over candy to coat.
  9. Sprinkle a sheet of wax paper with sugar.
  10. Use a fork to carefully transfer candy to paper.
  11. Store between sheets of waxed papers in airtight container.
