Apricot Delight

Ingredients
- 1 (16 ounce) can apricots, drained and chopped
- 1 cup crushed pineapple, drained
- 1 (3 ounce) package lemon gelatin
- 1 cup hot water
- 1⁄2 cup reserved fruit juice
- 1⁄2 cup miniature marshmallow
- 1⁄2 cup chopped nuts, if desired
- 1 cup whipped cream or 1 cup Cool Whip
Directions
- Drain fruit and reserve juice.
- Dissolve gelatin in hot water, add 1/2 cup juice, and chill until partially set.
- Fold in fruit. Pour in a 9"x9"x2" pan. Top with marshmallows. Chill until set. Cover with whipped cream. Garnish with nuts.
