Apricot Curry Sauce

Yields: 2 1/3 cs.
Ingredients
- 3⁄4 cup dried apricot
- 1 1⁄2 teaspoons hot curry powder
- 1⁄2 cup rice wine vinegar
- 1 cup water
Directions
- Purée all of the ingredients for 3 minutes, or until smooth.
- Refrigerate overnight, and strain through a fine-mesh sieve.
- Refrigerate until ready to use or for up to 1 week.
