Apricot and Cinnamon Kasha

Ingredients
- 3 tablespoons olive oil
- 1 large red onion, chopped
- 1 cup whole dried kasha
- 1 1⁄2 teaspoons ground cinnamon
- 2 1⁄2 cups chicken broth or 2 1⁄2 cups vegetable broth
- 1⁄2 cup dried apricot, coarsely chopped
- salt
Directions
- Heat oil in a large skillet over medium high heat. Add onion, kasha, and cinnamon; sauté until onion starts to soften, about 3 minutes.
- Add broth and apricots; heat to boiling.
- Reduce heat and simmer, mostly covered, until kasha is softened, about 10 minutes.
- Taste and adjust salt if needed.
