Ingredients
- 1 1⁄2 cups whole wheat flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1⁄2 cup brown sugar
- 1⁄4 cup orange juice
- 1 tablespoon orange juice
- 2 egg whites
- 1 teaspoon almond extract
- 1 1⁄4 cups grated carrots
- 1⁄3 cup dried apricot, chopped
- 1⁄3 cup chopped walnuts (optional)
Directions
- Combine flour, baking powder, baking soda, and brown sugar in large bowl. Stir to mix well. Add both 1/4 cup and 1 tablespoons orange juice, egg whites, and almond extract, stir until moistened. Fold in carrots, apricots, and walnuts (if you choose to use walnuts).
- Evenly spread in greased loaf pan. Bake at 350 F for about 45 minutes or until toothpick inserted in center comes out clean. During baking, bread might form some opening crevices, allow for some heat ventilation inside bread. Cool completely.
- Serve with a spread of peanut butter for some protein.
