Applesauce Roll Pancakes

From "Where's mom, now that I need her" cookbook. I made these one time while we were camping and my husband almost freaked because these were the exact pancakes his German grandmother used to make. I don't know if they are German or not, but they are the best! Show more

  1. Heat applesauce in small pan, keep warm.
  2. Mix eggs and milk.
  3. Add flour, salt and sugar.
  4. Beat until smooth.
  5. Grease a small frying pan and heat until hot.
  6. Pour 1/4 cup batter into the pan.
  7. Tip pan quickly until batter covers bottom of pan.
  8. Turn and brown slightly on other side.
  9. Remove from pan.
  10. Spread with 1/4 cup applesauce and roll.
  11. Sprinkle with powdered sugar, if desired.
