Apples and Onions: a Side Dish for Pork

Take a pork roast out of the oven, turn out a bowl of stuffing and add a hot dish of apples and onions. Show more

Yields: 1 quart

Ingredients

  • 14 lb lean bacon
  • 1  lb apple, sliced
  • 1  lb onion, peeled and sliced
  •  salt and pepper
  • 1  tablespoon brown sugar (use only if apples are tart and the onions too strong)

Directions

  1. Cut bacon in inch squares and fry out.
  2. Remove bacon.
  3. Reserve grease.
  4. Clean the fry pan.
  5. Add 1 tablespoon of bacon fat to hot fry pan and add onions.
  6. Brown the onions until golden and translucent.
  7. Add more fat if needed.
  8. Add apples and cook until tender.
  9. Taste, if mixture is a bit sharp, add brown sugar.
  10. Pour apples/onions into a hot baking dish.
  11. Top w/ crumbled bacon.
  12. Cover& keep warm in oven until serving time.
